Fresh Fig Sorbet

Why not make this ‘nutritious and delicious’ fig sorbet. Figs both fresh and dried contain a very good amount of magnesium. Magnesium is a mineral that the body requires for muscle and nerve function, heart rate control, healthy bones, and energy production. Magnesium is also required for insulin secretion and action.

Ingredients (makes 6 servings so some can be frozen for another day)

  • 10 whole, ripe figs
  • 3 tablespoons of local runny honey
  • 100ml water
  • 2 tablespoons lemon juice

Over low heat in a saucepan, heat the figs, honey, and water until the honey completely dissolves.

Place the fig mixture (allow to cool for 10 minutes) and lemon juice in a food processor or blender until the mixture is smooth.

Freeze the fig puree in an ice-cream maker using individual ice cream maker instructions. If you don’t have and ice cream maker place the mixture into a tub with a lid and put into the freezer. Take it out of the freezer after 3 hours and give it a good stir around using a fork- return to the freezer and allow to freeze.
